What's the difference between German last names ending in "n" and "nn"?

If memory serves me right, one of them was the way a German spelled it while the other was what the Jew used to show he was a Jew and not a German. Though the pronunciation of both was the same thing. Like in Feldman and Feldmann, Field man or farm hand.





I may be wrong, though; because that was something I learned long ago and my German is almost gone, now.
